Product Description

Think Filipino food is unhealthy? You may be mistaken. Dr. Rob Thompson, M.D.’s book, “The Glycemic Load Diet” debunks the notion that fats and red meats are unhealthy. Dr. Thompson states that “Dr. Atkins’ Diet Revolution”, published in 1971 that concentrated on a low carbohydrate, high fat diet, was on the right track, but Dr. Atkins was too narrowly focused to have his methods widely accepted. Good News! What Dr. Thompson and Dr. Atkins have rediscovered is exactly what the Filipino natives, the Negritos and ancient Malayo-Polynesian of the Austronesians, have known from the dawn of time. Dr. Atkins had been amazed to find that people that eat meals of low carbohydrate, high fatty foods are very healthy, contrary to popular belief. Dr. Thompson extended Dr. Atkins’ research and found that also contrary to conventional wisdom, there are both bad and good carbohydrates! Good carbs promote healthy living. These recipes take advantage of Dr. Thompson’s findings. This book of authentic Filipino recipes blends ancient recipes that were extant well before the Spanish invasions of the 16th century. It also contains more modem recipes that reflect present day foods. You will notice as you compare ingredients, actual Filipino cooking methods and eating habits haven’t really changed that much in the past 490 years! The key that Dr. Thompson’s research uncovered was that it’s the starches in our diets that are the killers. Potatoes, rices, wheat, breads, white sugars: the refined carbohydrates are the culprits that lead to our obesity and diabetes, not the fatty foods or the meats. All of our food consists of only three parts: fats, proteins, and carbohydrates. Our bodies need fatty acids from fats, the amino acids of the proteins, and the glucose from carbohydrates to survive. The majority of fats in our diets comes from the fatty parts of meats, dairy products, and oil-laden vegetables like nuts and olives. Our dietary proteins, we derive from eggs, dairy products (cheeses, milks and the like), the lean parts of meats, and protein rich vegetables like beans and nuts. Carbohydrates are derived from plant products like fruits, vegetables, grains, potatoes, rices, and sugar. Humans are omnivores: Nature has selectively formed us over millennia to not only be able to eat anything, our diets must consist of many variations just to survive and thrive. We represent the best of both carnivores and herbivores. Filipinos have long recognized this, and as such, have maintained what is one of the better eating habits on Earth. We hope that you embrace this healthy lifestyle.
